Apricot Cous Cous

Awaiting photo This is a very summery dish and is lovely tasty and light.

115g couscous

Six or so dried apricots, chopped

Handful of pine kernels

4 rounded tablespoons chopped fresh coriander

Juice of one lime

350ml vegetable stock, hot

50ml olive oil

2 teaspoons of chilli oil or a few drops of Tabasco sauce

One green chilli, deseeded and very finely chopped (can be omitted if preferred)

Freshly milled black pepper
  1. Use a Litre and half casserole dish with lid
  2. Place the couscous in the casserole dish, with the chopped apricots, pine kernels, chopped coriander, finely chopped chilli and pepper. Stir with a fork.
  3. In a measuring jug mix the hot stock, lime juice, olive oil and the chilli oil, pour over the couscous mixture. 
  4. Place lid on casserole dish and allow to stand, just before serving place in microwave for four minutes.
