Avocado Salad


A tasty BBQ salad for a hot day.

Ingredients
1 ripe avocado

2 large firm tomatoes

2 or 3 shallots

Half an iceberg lettuce

Half a cucumber

2 rounded tablespoons chopped fresh coriander

2 tablespoons fresh lime juice, one lime should do.

A few drops of Tabasco sauce

Freshly milled black pepper

Salad cress

Preparation

For best results skin the tomatoes, to do this half fill a mug with boiling water place a tomato in this for a few seconds use the tip of a sharp knife to remove the tomato and skin should peel the skin off. Replace the boiling water and repeat. Always be very careful not to scold yourself with the water.

Chop the tomatoes, cucumber, iceberg, shallots and coriander reasonable finely. Place these in a shallow dish, add chopped avocado and mix together, pour over the lime juice, Tabasco and black pepper, mix again. For a perfect taste, cover with cling film and chill for about an hour before serving. Just before serving place salad cress on top of the salad.
