Cajun Chicken in Pitta Bread


    
This is a very tasty, easy meal, and requires no advance preparation.  We cook this in a stoneware oven dish which retains moisture throughout cooking, you may need to use a lid in the oven if you are not using stoneware.
Ingredients
Large Pitta breads (2 per person)
Chicken breasts (1 per person)
Cajun seasoning (e.g. Schwartz grill and sizzle)
New potatoes
1 onion (chopped)
1 pepper (chopped)
a few mushrooms (chopped)
Oil
Mayonaise (check dairy and soya free)
BBQ Sauce (check dairy and soya free)
Ketchup (check dairy and soya free)
Preparation
Pre-heat oven to 180 degrees.
Place chicken in an oven proof dish and sprinkle seasoning over the top.  Put into the oven for 10 minutes.  Then add onion, pepper and mushrooms with drizzled with oil and return to the oven.
Cook for a further 10 minutes and then remove to serve.
While the chicken is in the oven warm the pitta bread in the toaster or under the grill (this makes it much easier to cut) and cut in half to create pockets.
Place chicken and vegetables into each pocket and add condiments as desired.
Serve with a few new potatoes.
