Chicken Casserole


A simple, flexible, tomato-based chicken dish.
Ingredients
Chicken breasts
1 tbs olive oil
Onion
Peppers
1 tin chopped tomatoes
1 tsp mixed herbs
Preparation
Preheat oven to 160 degrees
Saute chicken in olive oil until browned, remove into casserole dish
Heat remaining oil, add onion and cook for 5 minutes
Add peppers and cook for 2 minutes
Add tinned tomatoes and herbs and simmer for 5 minutes
Spoon sauce over chicken and bake for 45 minutes.
