Fish Pie

For those of you looking for a dairy and soya free fish pie, here you are!

Ingredients
For Mash:
900g potatoes
100mls oat milk
a wedge of suitable margarine

For Filling:
25g suitable margarine
2tbsp olive oil
1 leek
30g plain flour
450mls oat milk
1 x fish pie mix (contains salmon, smoked haddock and pollock)
100g frozen peas
fresh parsley (optional)
Preparation
1) Preheat the oven to 180 Degrees
2) Boil potatoes and then mash with oat milk and margarine
3) Meanwhile, heat oil and margarine in large frying pan, add the leek and cook until soft
4) Add the flour and cook for 2-3 minutes
5) Add oat milk and stir until sauce thickens (if using tomatoes then add here)
6) Once sauce has thickened simmer for 5 minutes
7) Add the fish, peas and parsley and season to taste
8) Place all fish sauce into an oven proof dish
9) Add the mash on top
10) cook in the oven for 35-40 minutes
