Lemon Cous Cous

A lovely tangy alternative to plain cous cous.

200g cous cous
250ml hot vegetable stock
Zest and juice of 1 lemon

1) Place the cous cous in a large bowl
2) Pour in the stock
3) Cover with clingfilm and leave for 5-10 minutes
4) Add the lemon juice and zest
5) Serve
