Meatball Sauce (Moroccan Style)

This is a moroccan style sauce to serve with meatballs - we've not got around to trying this yet, but begin with uncooked meatballs and follow the below recipe.

1 tbsp olive oil
1 onion (chopped)
2 cloves garlic, crushed
80g dried apricots
1/2 tsp ground cinnamon 
1 tin chopped tomatoes
200ml vegetable stock
1 tbsp fresh chopped parsely
25g toasted flaked almonds
1) Preheat the oven to 180 degrees   Bake the meatballs for 20 minutes.
2) Heat the oil in a saucepan and fry the onion for 5 minutes.  Add the garlic, apricots and cinnamon and cook for a further minutes.  Pour over the chopped tomatoes and 200ml of the stock.  Stir well and simmer for 5 minutes.
4) Stir the meatballs and parsley into the sauce and serve with couscous, garnish with the almonds.
