Ingredients Sausages (enough for 4 people) 1 tbs Olive Oil 1 onion 1 carrot 1 stick celery 1 red pepper 1 chicken stock cube (in a mug of boiling water) 2 x (400g) tins chopped tomatoes 1 x (400g) tin cannellini beans, drained and rinsed 1 tbs tomato puree 1 tsp oregano | Preparation 1) Preheat the oven to 200 degrees (don't preheat if using a fan oven). 2) Chop the veg. 3) Brown the sausages in a casserole dish on the hob in the oil for 5 minutes, then cut them up. Then add the onion, carrot, celery and peppers to soften (you may need more olive oil) and cook for 10 more minutes. 4) Add the stock to the pot with the tinned tomatoes, beans, tomato puree and oregano. 5) Bring to the boil and then simmer. 6) Put the lid on and place in the oven for 30 - 40 minutes. |
