Beetroot and sultana muffins


This is a recipe that I've not tried, however I thought it would be nice to include something a little different on here - use the contact me page to let me know what you think!

Ingredients
500g fresh beetroot, trimmed, peeled and grated.
210g sultanas
300g self raising flour
100g light brown soft sugar
1 tsp baking powder
1 tsp ground cinnamon
180ml sunflower oil
3 medium eggs
Preparation
1) Preheat oven to 180 degrees
2) Mix the beetroot, sultanas, flour, sugar, baking powder and cinnamon, until well mixed.
3) In another bowl beat together the oil and eggs and then pour into the other mixture.  Mix together well and then spoon into some muffin cases filling each almost to the top.
4) Bake in the oven for 25 minutes, until they've just risen and an inserted skewer comes out clean.
