Chocolate Fudge

Photo coming soon! I was so impressed that my mother in law found this recipe for chocolate fudge that is dairy and soya free - I hope you enjoy it!

250g icing sugar
1 tablespoon cocoa powder
50g white small marshmallows (or big ones cut up)
20g suitable margarine 
1 tablespoon Oaty cream alternative
1/2 teaspoon vanilla essence
Vegetable oil

  1. Brush vegetable oil over bottom and sides of a baking tin, line the bottom with greaseproof paper and brush over this too.
  2. Add the icing sugar and cocoa powder into a bowl.
  3. Put the marshmallows into a saucepan, add the margarine, oatly cream alternative and vanilla essence.  Put on a low heat and stir until melted.
  4. Pour the mixture into the icing sugar and beat together until all of the icing sugar is mixed in.
  5. Put into the baking tray and leave in the fridge for at least 3 hours before cutting into bite-sized pieces.
