Ingredients 30g plain flour 30g breadcrumbs (ensure suitable bread) 60g Suet 60g Brown sugar 1 egg 1/4 tsp mixed spice 1 medium apples (grated) 1/2 medium carrot (grated) zest and juice of 1/2 lemon 170g mixed fruit 1-2 tbsp brandy | Preparation 1) Soak the dried mixed fruit in the brandy and leave covered overnight. 2) Then stir all the ingredients together until they are well mixed. 3) Place the mixture in a greased pudding bowl, cover with greasproof paper and foil and tie on with string. 4) Steam for 5 hours on a low heat (make sure the pan doesn't boil dry) 5) Store in a cool dark cupboard until Christmas. 6) When required reheat the pudding by steaming for an hour. 7) Suggested accompaniments to Christmas pudding; are brandy butter, custard or cream. |
