Lemon Drizzle Cake

Picture coming soon! A lovely lemony treat - easy to make too.

225g suitable margarine
225g Caster Sugar
4 Eggs
225g Self raising flour
1 tsp baking powder
Zest of 1 lemon
Juice of 1.5 lemons
85g Castor Sugar

  1. Heat the oven to 180 degrees
  2. Beat together margarine and caster sugar until pale and creamy.
  3. Add eggs, 1 at a time, slowly mixing together.
  4. Sieve in the flour and baking powder and add finely grated zest and mix until combined.
  5. Line a loaf tin (8x21cm) with greaseproof paper, then add mixture and level the top.
  6. Bake for 45-50 minutes until a skewer comes out clean.
  7. While cake is cooling, mix together remaining lemon juice and sugar to make the drizzle.
  8. Prick the cake all over with a skewer or fork and then pour over the drizzle.
  9. Leave in tin until completely cool and the remove and serve.
