Ingredients225g suitable margarine 225g Caster Sugar 4 Eggs 225g Self raising flour 1 tsp baking powder Zest of 1 lemon Drizzle: Juice of 1.5 lemons 85g Castor Sugar
| Preparation- Heat the oven to 180 degrees
- Beat together margarine and caster sugar until pale and creamy.
- Add eggs, 1 at a time, slowly mixing together.
- Sieve in the flour and baking powder and add finely grated zest and mix until combined.
- Line a loaf tin (8x21cm) with greaseproof paper, then add mixture and level the top.
- Bake for 45-50 minutes until a skewer comes out clean.
- While cake is cooling, mix together remaining lemon juice and sugar to make the drizzle.
- Prick the cake all over with a skewer or fork and then pour over the drizzle.
- Leave in tin until completely cool and the remove and serve.
