Lemon and Oat Cookies

These are really yummy cookies - and easy to make too.  This recipe makes approx 16 large cookies.

150g light brown sugar
150g suitable margarine
150g self raising flour
Finely grated rind of 1 lemon
1tsp baking powder
150g porridge oats
1) Preheat oven to 180 degrees
2) Cream the margarine and sugar in a bowl.
3) Add the lemon rind, flour, baking powder and oats and mix together (you might find it easier to mix these in separately).
4) Grease 2 baking trays and place lumps of mixture on it, flatten these slightly (ensure they are spaced out as they will spread) and place in the oven.
5) Bake for 10-15 minutes - until golden.  Don't be surprised that they are still soft when cooked as they harden as they cool and therefore leave them for a few minutes before placing onto a cooling rack.
