Shortbread (makes approx 16)

This is a very simple and quick shortbread recipe which my children really enjoyed making and eating!

This picture shows the ones we made without cherries, but the ones with cherries were also very nice!

120g Plain flour
80g suitable margarine
1 tsp vanilla extract
40g caster sugar
12 glace cherries (optional)
1) Rub the flour and margarine in a mixing bowl, continue to rub together with your fingers until crumb texture.
2) Add vanilla, sugar and pieces of cherries and mix together.
3) Squeeze the mixture together to make a ball.
4) Roll out until about 1/2cm thick.
5) Cut required shapes and place on a greased, lined baking tray.
6) Cook at 160 degrees for 12-15 minutes.
