Spiral Cookies


Initially these seemed quite 'faffy' to make - however they were worth the effort.  In an interesting mix between a biscuit and a cake these are a very moreish snack, or a great treat for birthday parties!

Ingredients
300g plain flour
150g caster sugar
250g dairy and soya free margarine
1 large egg yolk
2tsp vanilla essence
1/2 tsp salt

1 tsp cocoa powder
Preparation
1) Beat the margarine and sugar together in a bowl.
2) Separate the egg white from yolk, discard the white.  Add the yolk and vanilla essence to the mixture and mix until it is smooth.
3) Add flour and salt and mix together to form a smooth dough.
4) Divide the mixture in half and rub cocoa powder into one half.  Make each half into a ball and wrap in clingfilm and leave in the fridge for 30 minutes.
The dough will be sticky when removed from the fridge so ensure you have plenty of flour on hand to enable rolling out!
5) Preheat the oven to 180 degrees.  
6) Roll the dough onto a floured surface to make an approximate rectangle about 5-10mm thick.
7) Place on half of the dough on top of the other, trim the edges and roll into a log.
8) Slice the log into 5mm cookies.  
9) Use the trimmings to make make marbled cookies in the same way.
10) Place on a lined baking tray and bake for 15 - 18 minutes.
