Syrup Sponge Pudding (Microwave)

This is a lovely nostalgic recipe - a real winter warmer.

60g dairy and soya free margarine
60g granulated sugar
2 eggs
120g self raising flour
8tbs golden syrup
1) Whisk/beat all of the ingredients (except the syrup) together in a mixing bowl.  
2) Put the syrup in a microwave suitable bowl, add the other ingredients on top.
3) Cook on medium power in the microwave for 2.5 - 3 minutes, check the sponge consistency and put in for a little longer if not springy.
4) Leave to stand for a few minutes and then turn out onto a plate.
5) Serve immediately.
